Buffalo Cauliflower "Wings"


Happy Monday! Posting this recipe due to insistent demand :) I made this last week and got a lot of messages asking how to make it . So I am sharing the recipe I used so you can all try it at home :

I really love the smoky tangy flavor of buffalo wings and so I researched on recipes on how I can make a healthier/ vegetarian version. I found several ones and just tweaked it a bit! 

Casa Poniente's Buffalo Cauliflower "Wings"
Ingredients: 
  • 1 head cauliflower, broken into small florets
  • 1/4 cup cider vinegar
  • 1 tablespoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1/8 teaspoon fine sea salt
Procedure:

1. Preheat the oven to 450°F or prepare a grill for medium heat cooking. 
2. Roast cauliflower on a parchment-paper-lined baking sheet or place it on a grill rack and cook, turning occasionally, until browned and tender, 10 to 15 minutes.  
3. Whisk vinegar, sweet paprika, garlic powder, smoked paprika, cayenne, salt and 3 tablespoons water together in a large bowl. 
3. Taste the sauce; if you’d like it hotter, you can add a bit more cayenne. Toss the cauliflower in the sauce until well coated and transfer to a platter.

*Gluten-free/Vegan 

I made a truffle-peppercorn cream cheese dipping sauce (NOT vegan though) using soucream, cream cheese, truffle oil and some crushed peppercorn to go with this! It was AWESOME!
